Looking for a snack that is easy, healthy, filling and delicious? And much cheaper than packaged snacks?

Energy Bites fit the bill, at least for me. They are filled with healthy, satisfying ingredients and are one of my favorite snacks.

I was inspired by Food Doodles All-Natural, No-Bake Energy Bites, but what fun is cooking if you don’t change the recipe?

Energy Bites Recipe:

Ingredients: 

(Part of the fun of this recipe is just how easily you can change ingredients! We don’t like ours overwhelmingly sweet and I added coconut oil make it more filling. )

  • 1 cup smooth peanut butter (or other nut butter)
  • 1/2 cup coconut oil
  • 1/2 cup honey, preferably raw
  • 1/2 cup shredded coconut
  • 1/2 cup ground flaxseed
  • dash of salt
  • ~2 cups old-fashioned oatmeal
  • ~1/2 cup chocolate chips, raisins or other add-ins (optional)
Instructions
  1. Cream peanut butter, oil and honey
  2. Add coconut, flaxseed and salt
  3. Add chocolate chips and enough oatmeal to make a nice, moist cookie dough texture
  4. Refrigerate for 15-30 minutes or until you can easily shape. Roll into balls.
  5. Freeze or refrigerate.

    I made something similar except into bars…my family loved them. Next time I will have to make them into balls..the kids will like that!!

    I too like that they are so versatile..you can add whatever you like!

    I have been hearing alot about coconut oil lately, but haven’t made a purchase..do you buy yours over the Internet at a local store? Thanks!

    I love these! They’re so yummy :)

    I always use ground chia seeds instead of flaxseed, just because it’s what I always have on hand :)

  8. I made these a little while ago and we loved them! I didn’t grind my flaxseeds as it wasn’t working in my blender. I also added about 1 teaspoon of vanilla. I used my cookie scoop instead of rolling them as they were crumbling too much. The cookie scoop worked great and made them perfect bit size. My husband and 19 month old loved them – I’m definitely going to making them very often! :) Thanks again for sharing your recipe!

      I hope so too! Two of my children love them and would eat them ALL the time. My oldest isn’t as big a fan. Not quite sure why. :)
