Recipe: Whole Wheat Applesauce Muffins

Muffins make a filling, frugal and healthy breakfast or snack. I’ve been keeping a stock of freezer-friendly muffins for Joshua to grab on workday mornings or for us to enjoy with a bowl of homemade yogurt.

These muffins are some of our family’s favorite—and they taste almost as good frozen and thawed as they do fresh.

The recipe makes two dozen but I usually do one dozen regular-sized (in muffin tins) and two dozen mini-muffins.

I like muffins. This looks like it would have just the right amount of sweetness 🙂 🙂 I’m gluten free for health reasons, so I’d have to make mine differently…BUT these do look tasty good 🙂 🙂 🙂 Have a great weekend. Love and hugs from the ocean shores of California, Heather 🙂

Yumm! You’re making me hungry. 🙂 We love muffins too.
Have you ever tried freezing the muffing batter in muffin tins? Once they are frozen, pop them out of the tins and store in a zip-lock bag until you want to cook them. Sarah does this a lot. That way if you are pressed for time, you don’t have to make fresh muffins, just pull them out of the freezer and cook. 🙂 That way you can also have a variety of kinds all at once. 🙂

Hi! I just came across this post when I googled “whole wheat applesauce muffins”. Question: have you ever tried less oil and more applesauce? Just wondering if that’s an option as I am sort of an amateur baker and I know that applesauce can be subbed for oil. Thanks!
