Eppli Caka, or “Apple Cake”, was a traditional dessert growing up in the Faroe Islands. Still a favorite at my parent’s home, it is such a delicious healthy and simple dessert…. or breakfast!

Ingredients:

  • Applesauce (homemade is definitely tastiest!)
  • Granola (again, homemade wins!)
  • 1-2 apples, cored and diced (optional)
  • Whipped cream
  • Chocolate (optional)

Alternate layers of applesauce, granola and apples. Top with whipped cream and sprinkle with chocolate chips. Serve immediately.

    “Eppli Cakka” is Faroese. My dad grew up in the Faroe Islands and I was born there. Even though the total population is only about 45,000 they have their own language but are under Denmark’s government. Unless you’re a geography teacher or world traveler, few people know it exists. :)

    Yum, Anna! Keep these Faroese recipes coming (at least the sweet ones – my palatte isn’t really accustomed to um, large ocean species).
